Every week the shop receives one whole steer, four whole pigs, lamb, duck, many, many chickens, and other specialties like rabbit when available. By purchasing the entire animal we have a direct relationship and exchange with the farmer, which allows them to focus on caring for their animals rather than having to find ways to bring the meat they raise to market. We use a variety of techniques to honor and make the most out of the animals we buy, and make every effort to minimize waste. This is why, when you visit the shop, you will see cuts that you may not be familiar with, like individual butcher steaks, offal and organ meats, as well as an extensive line of housemade products including, sausages, smoked meats, potted meats, pates, rendered fat for cooking, bones, stocks, broths and treats for your pet.

Part of running a whole animal butcher shop means that there are limited amounts of certain cuts of meat. While we are committed to utilizing the whole animal, we also understand that you may have your mind set on something specific. With typically over a thousand pounds of meat in our refrigerator at all times, if you don’t see what you are looking for please ask and we will find you a suitable substitute. We are always excited to talk about the different cuts we offer and how to work with them. If you want to make sure you get what you are looking for, or order a specific quantity of something, come by and ask in advance, or give us a call and a few days notice and we will gladly accommodate your request.
